Bar Manager, Gavin Teverasan, and Head Chef, Leon Quek have teamed up for the new “Breaking the Norm” menu — which offers a bold twist on modern Japanese Izakaya.

Teverasan, a veteran of Singapore’s burgeoning craft cocktail scene, brings over a decade of experience from esteemed venues such as 28 HongKong Street and Nutmeg & Clove. His approach is characterised by the considered fusion of authentic Japanese ingredients with contemporary mixology, resulting in meticulously crafted cocktails that offer a nuanced sensory experience. On the culinary front, Chef Quek, whose expertise has been honed at renowned establishments including CUT by Wolfgang Puck, showcases his mastery of fire-centric cooking,  including smoking and robata techniques.

A Menu That Dares to Impress

Inspired by the stylish and rebellious spirit of the Japanese ‘modan garu’ — the ‘modern girls’ of the Taisho era — MOGĀ’s ‘Breaking the Norm’ menu pushes boundaries with unexpected and thrilling flavour pairings, reflecting the ‘modan garu’s’ embrace of the new and unconventional.

The new menu masterfully interweaves the traditional and the contemporary. The drink selection features eight Izakaya cocktails that are approachable yet elevated, alongside eight reimagined classics spotlighting Japanese ingredients with bold twists. Standout creations include:

  • Dirty Sake-tini – an alluring Japanese riff on the classic Martini, featuring sake, shochu, and house-made pickling brine for a savoury, umami-laden twist.
  • Strawberry Veil – sweet, juicy, and utterly refreshing milk punch, featuring Hendrick’s Gin and Sloe Gin with strawberry, apricot, and clarified milk, finished with a delightful fizz.
  • The Frozen Drink – a playful, boozy take on a diner milkshake, featuring ice-blended whisky, matcha, azuki beans, cream, and taro liqueur.

The food menu is thoughtfully designed to complement MOGĀ’s innovative cocktails. For seafood lovers, the Crispy Squid presents a delightful combination of sansho fish sauce, yuzukosho, and green chili, offering bright, tangy notes. Adding to the indulgence is the beloved Hokkaido Milk Bun, a soft, pillowy delight filled with luscious umami spreads that pair seamlessly with the cocktails, making it a true crowd-pleaser.

  • Lunch Hour Liquid Deals from 12 PM to 3 PM, where signature drinks like the zesty Yuzu Negroni Fizz are just $10++ per glass.
  • Happy Hour Cocktails every evening from 6 PM to 8 PM, with five delectable concoctions priced at $17++ each, including MOGĀ’s Gimlet, a masterful blend of Hendrick’s Gin, calamansi champagne cordial, and lemon.
  • Ladies Night happening every Wednesday 9.30pm to 11.30pm, featuring a free-flow Prosecco promotion with three package tiers from $32++ per guest.
